On a walk through the market ,I came across a cart selling ripe red chilli right beside a sugarcane juice stall.With no delay ,I picked up both the ingredients and decided to make a savory using them.
For spicy marinate,chop five to six chillis .Grind them along with 8 cloves of garlic,1 Tsp of mustard oil,1/2 Tsp turmeric, 1/2 Tsp apple cider vinegar and 1 Tbsp salt.
Keep the marinate aside.
To add a complimentary sweet touch to the dish,pour 1 liter fresh cane juice into a deep tick walled container.Add 1 Tsp lemon juice and 1 thinly sliced ginger.Heat the mixture on the low flame stirring repeatedly.
Keep heating until mixture is 1/4 of the original volume.
Once the syrup has reached the room temprature add it to chicken with freshly made chilli paste,1 thinly sliced ginger and 2 Tsp of lemon juice.Leave the meat to marinate for at least 6-8 hrs.
In a slow cooker add a little cooking oil.Drop the marinated meat along with syrup . Allow it to cook on a low heat.
Meanwhile , add 1 Tbsp of soya sauce,1 Tbsp BBQ sauce and 2 Tsp cornflour .Mix the ingredients taking care that no lumps are formed.
Once the meat is almost done add the cornflour and allow it to cook for 5 to 10 mins.
Serve the flavorful sweet-spicy savory with sticky jasmine rice or spring onion fried rice.
