I was always fascinated by the way my Grand Mom could churn some amazing fruit preserves.This super easy recipe could be an ideal alternative to packaged ones. With strawberry season nearing the end,I decided to pick up this recipe from my Granny’s diary and give it a try.As I prefer not to use PECTIN, I have used not so ripe produce. Slice strawberries into medium sized chunks.Place them in a thick base non stick vessel and switch on the stove. Keep stirring on a low flame. Once the fruit is squishy add 3 Tbsp of sugar and a pinch of salt.You can adjust sugar levels as per your taste preference.I prefer my jams a little less sweet. Add 1/2 Tsp of lemon juice so as to lower the PH level,prevent the growth of bacteria and enhance the flavor. Continue cooking until desired texture is reached.Once done, allow it to cool down. Transfer the fruit preserve into a sterilized jar .Refrigerate and use it up to 3 weeks. You could use this as a spread or as a component to enhance flavor of your cake.
